"Puro is Movia's highly individual sparkling wine. Made from pinot noir that undergoes secondary fermentation in the bottle (and is shipped undisgorged) this is vibrant and lifted, with citrus and strawberry aromas that lead to a cider-like taste. Those fruit flavors become savory with air, showing a salty mineral character that lasts for minutes. This is a compelling wine that may well challenge your expectations."

Please Note! This sparkling wine from cult Slovenian winemaker Aleš Kristančič is shipped undisgorged. That means that it still has the yeast and sediment in the bottle that it was fermented with (actually secondary fermentation but this isn’t the place to get into that). The wine must be stored and chilled UPSIDE DOWN so that the sediment settles into the neck.
In order to disgorge it, place the bottle upside down in a vessel filled with water (a clear punch bowl or even the kitchen sink) being very careful not to disturb and stir up the sediment too much. Hold the cork in one hand as you gently twist the bottle with the other; when the sediment is released into the water turn the bottle right side up. As long as the sediment has settled entirely in the neck before disgorging, the wine will be clear and not cloudy.
Or you could simply do as some suggest (and prefer) and drink it with the yeast and sediment still in the wine.

It's hard, really hard, to find a wine that is entirely unique. This one fits the bill nicely. First of all, you have to disgorge this puppy yourself, OR you can not disgorge it, leaving it cloudy with yeast and have taste what all sparkling wine was like before Madame Clicquot invented disgorgement and the clarification of sparkling wine in 1816. Either way your dinner guests will have an experience they will never forget. And that's before you've even tasted it. Once past your lips you'll see that this wine is INCREDIBLY complex. Layer upon layer of flavor along with gripping tannins. Certainly not for everybody but an unforgettable wine.
