About Montilla-Moriles:
The Montilla-Moriles wine region is situated in the province of Córdoba and produces mainly sweet dessert wines using similar techniques to those used for the production of Sherry, that is, by crianza bajo velo de flor (which involves allowing a "veil" of flor yeasts to form on the surface of the must in the casks) and por el sistema de criaderas y soleras (which refers to the process of aging the wine in soleras). Because this appellation is not as well known as those that produce Sherry, it is an excellent value.

About cream Sherry (or in this case, cream Montilla-Moriles):
Cream Sherry is a variety of very sweet Sherry that is made by blending a drier style Sherry with a very sweet variety, most commonly Pedro Ximénez. Contrary to its name, it does not in fact have cream in it (sorry).
