But there are bound to be some who will find its pungently briny, crustacean, mollusk- like, savagely herbal, and downright sweaty aromas off-putting. I found them utterly fascinating and couldn’t wait to find out what the palate would reveal, which perhaps predictably is reminiscent of assorted fin and shell fishes cooked with fennel over a pine wood fire, a description that obviously suggests at least the broad outlines of some of the things one can do with it. This luscious, juicy wine sticks to the palate with a mineral, herbal tang that you simply have to experience. I have no idea how it might age, although my intuitions suggest one experience it over the next 9-12 months."
